I'm by no means an expert on Bretonnia, but since it was one of my first armies, I do have some experience with them. I'll take a moment to lay out something I've used with some success.
One large unit of archers, taken in a single rank will serve to protect your Treb just fine.
Put two of your heaviest hitting Knight units at the sides of the board to stop anything trying to flank you dead in their tracks, leaving one of the archer units close enough to each to effectively support them if the need arises while leaving them in position to support the middle of your formation if you need to.
One of my favorate things to do with this kind of army is to use a "Spear" formation to drive up the middle of your opponents army. If your opponent decides to flank your leading unit, you will be in a good place to hit those units where it hurts.
Think about doing something like this:
-------T------- -------A------- --A----P----A-- -E--R--E--R--E- -------R-------
T=Trebashet A= Archers E=Errant Knights R=Realm Knights P=Pegasus Knights
Place your Characters wherever you want them, and put your skirmishers wherever you can best exploit weak points in your opponents formations.
