yeah a varied force is good. I play my dwarf obsessed brother all the time. I find inner circle knights are great. Screen them with a smaller set of knights, as that 1+ armour save is still useful against shooting, then let them wreak havoc. They can be awesome at taking out all the dwarf shooting units with ease.
Flaggelents are also brilliant, but susceptable to missile fire. So dont get them shot too much but if you can get them into combat with the dwarf elite, ironbreakers, hammerers, longbeards etc, they can postpone the units ability and allow you to set up flank and rear charges.
Remember also, cannons are brilliant at taking out cannons and other artillery. So while its risky he might take out yours, its worth it i say for the chance of taking out his organ gun, or whatever artillery he takes. Practice your guessing. One of this years white dwarf mags had a really good article for that.
Finally, of course your going to take some state troops, but always take detachments as well, as without them your gonna get done even by the shooty dwarfs in CC. If you try some small units of crossbowmen as well, you might find you can lessen his shooting and take a few rank bonuses with only with only whatever quarrelers he has able to shoot you, but they probably wont because i doubt theyl be prioroty.
Hey and also if you are going to take wizard(s), give one van horstmanns speculum, as any dwarf champion has better stats than a wizard, let alone his characters.
